Lee Ann drove my mother to Portland for our Thanksgiving dinner. My brother Steve, wife Grete and their daughter, Heather, joined us. So, we had 7 for dinner. Nearly everything on our menu was from the November Cooking Light magazine.
Our menu: Low Fat Hummus, Trader Joe's Pastry Bites with Feta Cheese & Caramelized Onions, , Ginger-Carrot Soup, Wild Rice Stuffing, Green Beans with Bacon, Roasted Root Vegetables with Walnut Pesto, Ranch Mashed Potatoes, Gravy, Oyster Dressing, Spinach Salad with Grapefruit, pumpkins pie and flourless chocolate pie.

Everyone liked Grete's salad, with its tangy salad dressing, grapefruit and toasted hazelnuts.

Ginger-Carrot Soup

I served a soup for the first course. It was great. For the recipe, look at my entry for the November Bunco at Wendy Richey's.

I didn't take very many food or people pictures. When it is Thanksgiving and you have been busy cooking and everything is ready at the same time, it is hard to stop to take a photo, but I had to capture the oyster dressing Robert made. We saw Paula Deen make it on her Thanksgiving show and Robert loves oysters, so claimed he would make it and he did! He, Steve and my Mom loved it. My brother even took some home. What can I say....
My brother made a flourless chocolate cake which he served with a raspberry sauce.


This pumpkin pie with a pecan topping was made by my brother, Steve. Boy, it was good. His recipe for the crust, and maybe the entire pie, was from Cooks Illustrated.
