We Are Taking Part in Food Stamp Challenge

Today is day 4 of the Food Stamp Challenge that Robert and I have joined with some of the members of our church. We went to Fred Meyer right after church Sunday to select food for the week with a budget of $1 per meal, per person. We even had money leftover that I will likely spend tomorrow. Gov. Kulongoski and his wife are doing the same thing (click on his name to see NY Times write-up).
Breakfast have been the same as usual. Eggs and bulk oatmeal are cheap. We share a fruit or have a small glass of juice. Lunches have been: bologna or peanut butter sandwich with a carrot or Banquet frozen meals that cost $1. Dinners have been: hamburger gravy on potatoes; pinto beans I cooked from a little package and made into a kind of chili with Fred Meyer breakfast sausage (not the best taste, but best price), which we put on rice; ravioli from a big can with canned green beans. Tonight we are having left-over beans and rice and a little cauliflower.
We miss quality whole grains, salads, vegetables, and snacks. Today we couldn't buy a CUP of soup at a cafe in a building we were having a1 pm meeting. We had time to kill and wanted to eat more than our sack lunch, but the soup was $3.25, which is over an entire day's budget for one person. Forget about buying coffee!
